WHISKEY

We know, you want whiskey. So do we. But it takes a while…

We started making whiskey before we even opened our doors, in 2013. But almost all of it is still in barrels. We’ve been putting up a few barrels at a time, now and then, since then. But we aren’t going to have a whiskey, we’ve been making whiskies. We’re making it like we like to drink it - we like to try new things all the time, so we just keep changing the recipe. Changing grain bill, changing strains of grain, farms, yeasts, fermentation temperatures, cuts, barrels…

For the first few years, it was all rye whiskey, then we started making bourbon whiskey as well. It will be a few years for the bourbon though.

We will unbarrel and release whiskies now and then, probably a couple times a year, when something is ready. But it will be different every time. The best way to make sure you know about the next one is our email list (at the bottom of the page). Our first whiskey release was rye whiskey in the spring of 2019, it sold out from our tasting room in about 6 hours.
